FYI: If you make the turtle shortbread cookies: They will in fact brown if you let them. I had to cook them a bit longer than the directions said. It won't hurt them either way, but I like the flavor of the slightly browned ones. They'll only brown on the bottoms, not the tops. Also, if you do the caramel and pecans bit to it all... BE CAREFUL... I heated my caramel very mildly, but the caramel got darker and darker as I kept at it, and the result was instead of nice chewy caramel, you ended up with 'hard ball stage' which when cool isn't chewy, but like a hard caramel or brittle. AKA: It's gonna snap or all come off when you take a bite, and get uber-stuck in your teeth and be a challenge to eat. Watch your fillings! Just thought I'd pass that info along.
