I can't remember why it was so important to me to come up with a yummy lemon cake recipe, I just remember that I absolutely needed to have one last week. I planned it all out in my head, I've been thinking about it for days, and tonight I was able to execute said lemon cake (now that all the matcha cake has disappeared). As I nibbled on the finished product, I couldn't help but wonder why it was so important to have a viable lemon cake recipe. I suspect I must look through my Pampered Chef recipe books. I probably wanted to make some recipe in there that required a boxed lemon cake (which, in my world, means I need to make a lemon cake recipe to replace it).
In other news... I made channa masala, saffron rice, and mock onion kulcha for dinner tonight. It was my first try and I think it was a smashing success. I also attempted tandoori chicken. I say attempted because I didn't realize when I dreamt this elaborate menu last night that I would need to marinate the chicken before roasting it. Ah well. There's enough channa masala for days, so the chicken is enveloped in a pillow of spices and will be cooked tomorrow night.
I really love home-cooked Indian food. Anyone want to come over for dinner tomorrow night? The channa masala is vegan. The tandoori chicken will not be vegan, however. *grin and wink*
