Recipe Thoughts...

A couple nights ago, after watching a recent episode of The Next Food Network Star, I found myself trying to think of a food I would hate working with; none really came to mind, though as I was musing, I had an idea for a dish using pomegranate.

The gist of the recipe is to use a reduction of pomegranate juice, seasoned with some chile powder for some heat, as a glaze for a chicken breast; after the glaze is applied, crushed pistachios are used to coat the chicken, and the breast is seared, then served over a bed of couscous, cooked in chicken broth spiked with a touch more pomegranate juice, just to echo the flavors in the chicken.

Obviously, I haven't refined the recipe, though I hope to try it out later this week. Hopefully, I'll have willing guinea pigs for this culinary experiment of mine...
