mexican fusion food. think traditional mexican food prepared by french chefs
my interview is at ten and im up at nine...suit pressed...debating whether or not my knife bag will be handy...i get dressed and opt out of not taking my knife bag...its only an interview..
i get there tell mike henson(mikes worked for falk since he was 16...hes 22...so hes paid dues...)straight up that im ready and willing like a virgin on prom night...we shoot the shit talk shop...figures...contracts...knife skills?
in the back of my head im thinking..."fuck fuck FUCK!"
he dices a spanish onion...with precision...hands me his SHUN KAJI 13'
IM LEFT HANDED...they(Shun) only make knives by special order for left handed people...im already nervous as is...im wielding a thirteen inch 200 dollar knife...my legs shake and i forget how to dice a fucking onion.
i cut the onion...not to my liking...but...i think i did okay
