Swedish oven pancake with bacon and lingonberry jam

This is my take on a typical Swedish dish.
The original recipe does not contain onion and has salted pork instead of bacon, but I find this one better so I thought I'd share it with anyone interested.

What you'll need:
roasting pan or ovenproof dish, bowl, whisk, knife, frying pan, cutting board

Ingredients:
3 eggs
1 cup wheat flour
2,5 cups milk
1 small onion
about 7-8 ounces (ca 200-250g) bacon
salt & black pepper
Lingonberry jam

Preheat the oven to 437°F (225°C)
1. Mix eggs, flour and milk.
2. Chop and fry the onion.
3. Dice and fry the bacon.
4. Add the onion and bacon to the mix and stir.
5. Add a small pinch of salt and some black pepper.
6. Pour the mix into the roasting pan or ovenproof dish and bake for 20-25 minutes.
7. Serve with lingonberry jam ( -and I recommend milk to drink).

(The bacon is pretty salty in itself so be careful when salting)
