Recipe help!!

I know this is a random fly-by posting... and I promise I'm working on getting those Croatia pics up... but in the meantime I need the assistance of my LJ foodie friends!

We're having a couple over tonight for a BBQ and my friend has a glucose intolerance which means he can basically eat almost no carbs. The main dish is easy, but what about sides ( Read more... )

My hubs is doing South Beach, so I can help a bit... I think antipasto is great. Seth also loves olives and we'll do an olive platter with different types - jalapeno, blue-cheese stuffed, etc. I was going to suggest beans (black beans, refried). And could you do crudites with the guac?

Will he eat fruit? Seth will eat apple or pear slices with Brie.

Great ideas! I don't know about fruit, but I'm guessing if he gives in on tostitos he can eat some fruit. Thanks for the recs!

I like this broccoli side:

Garlicky Sesame Cured Broccoli Salad

1 1/2 teaspoons red wine vinegar
1 teaspoon kosher salt, more to taste
2 heads broccoli, 1 pound each, cut into bite-size florets
3/4 cup extra virgin olive oil
4 fat garlic cloves, minced
2 teaspoons cumin seeds
2 teaspoons roasted (Asian) sesame oil
Large pinch crushed red pepper flakes.

1. In a large bowl, stir together the vinegar and salt. Add broccoli and toss to combine.

2. In a large skillet, heat olive oil until hot, but not smoking. Add garlic and cumin and cook until fragrant, about 1 minute. Stir in sesame oil and pepper flakes. Pour mixture over broccoli and toss well. Let sit for at least 1 hour at room temperature, and up to 48 (chill it if you want to keep it for more than 2 hours). Adjust seasonings (it may need more salt) and serve.

this sounds AWESOME. So is the broccoli just raw then? Or do you think you could throw it on the grill like that?

I did it raw...and it was tasty. I think you can throw it on the grill too.

Oh, and also - heirloom tomatoes are delish right now.

Just slice some up and get some buffalo mozzarella and basil leaves.
Pour some good olive oil on top and sprinkle with kosher salt
Voila!
Caprese salad.

Not boring at all! Although I would throw garlic on it - garlic is a foodgroup in my house. Great idea.

i love doing maple roasted butternut squash

butternut skinned, inside cleaned (remove the seeds) and chop into cubes
mix olive oil, maple syrup, salt and cayenne pepper together (easy on the cayenne and i use a little more of the maple syrup)
pour over the butternut
bake for 35mins at 350

its delish!

sorry i dont have exact measurements.
