Jack seems to have found himself infatuated with Lemon. Liz. (If he's going to be infatuated with her, he should think of her by her first name.) Liz, who has a wedding dress stained with ham fat and a fixation on an ex-boyfriend, not to mention a list of quirks that make her someone he can't be infatuated with. But he is, so:
"May I be honest with you, Lemon?"
She seems intrigued and wary simultaneously; he has mentored her well. "You're going to say it anyway, so. Go ahead."
"I have feelings for you."
"Feelings?"
"Romantic feelings."
She stares at him, face a mix of surprise and something else that he can't quite place. At the very least, it's not horror.
That's a positive.

Liz is not interested in Jack. She knows this because she is just not, so. There.
Can't argue with that logic.
Except one really can, because she finds herself thinking about him. This could be blamed on him throwing out I have feelings for you, but she's had people -- well, Greta -- declare their interest in her without causing Liz to really consider it for too long. And when she's around him, she can't shake this need to... kiss him?
But, yeah. She's not interested in Jack. (She's really interested in Jack.)

Liz has been avoiding him, which Jack can only assume means she did end up being horrified by the idea of him being romantically interested in her. This shouldn't bother him; though the experience has been a rare one, he's been dismissed outright by women before. But this troubles him more than previous rejections, as this is more than a passing bewitchment; he's actually in love with her.
He finds it strange that he's not more surprised. But what isn't surprising is that he doesn't want to give up on the possibility of them. So:
"I suppose you don't care to know this, but I'm in love with you."
She stops suddenly, just stares at him. She opens her mouth. Closes it. "Oh, screw it."
Then, she kisses him.

She can't stop kissing him. But why should she? Huh? Why should she stop? Answer that one.
Also: why is she being so confrontational with herself?
Probably because her brain is telling her -- as it often tries to -- that Jack is wrong, wrong, WRONG for her. But she can barely listen to that inner voice when he's in the room, so she really can't pay attention to it while he's touching her and kissing her and... being in love with her.
She thinks she better admit to herself that she's in love with him, too.

"I don't know, Jack, this is pretty romantic. Maybe you should be dating him."
"I'm perfectly happy with my love life as it is." He pauses. "That being said, his version of the song later on the tape is rather touching."
"Huh. Are you sure my love is really groovy enough?"
He considers this for a moment. "Reasonably sure, yes."

Everyone else at the party is staring at her (well, a few people are, and that might be because her eyes are darting around the room, searching for people who are judging her), and Liz is feeling more self-conscious by the moment.
"Yes," he says. "Why are you so irritated?"
"This song is about being in love with someone who's stupid and ugly."
"If you take it literally, perhaps. But this song is really about being in love with someone so deeply that their imperfections aren't too worrisome. About not wanting to change anything about the object of your affection." He pauses. "For the most part."

Took a long time to come
She's thinking of having her ham-grease-stained dress cleaned. Not that she knows or even really thinks they're ready to get married, but it feels like a future possibility. Jack really feels like the man she could end up marrying.
And as she looks at the wedding gown/napkin she bought on a whim, she finds herself thinking of his pep talk that day she fell apart while wearing it.
He was right: This is going to be their year.
