So, I'm alone this weekend. I went and got my groceries thinking there was ice cream or cookies if I wanted something sweet. I got home and put my groceries away, made dinner (veggie-full pasta salad), cleaned up dinner and went to read. A few hours later I went rummaging for something sweet. I came up with NO-THING. No ice cream, no cookies (where the HELL my Tim Tams went I would like to know!), the only sweet thing I could find in the house was a Reese's cup which I had no desire to eat.
I thought for a moment and remembered I went on a baking spree for the kids' school back in June and I had lots of fresh baking ingredients, I cheered and whooped until I remembered I had NO EGGS. None. Not even egg-substitute. I was bummed and decided I was too tired to go back to reading and got online. Where I said, "Duh! Moron! That's what GOOGLE is for."
So a bit later I went back in the kitchen with a scribbled note and made
Wacky Cake.
Flour, cocoa, baking soda, salt , sugar, vanilla, vinegar, oil and water but no eggs.
The best part? MINIMAL dishes and MINIMAL effort.
It's not done yet but I did lick the fork and it was good.
Fingers crossed for my egg-less cake.
Oh, and the second best part? No obligation to add nasty icing!
