WHAT I LIKE TO DO WITH THAT LEFTOVER TURKEY
I love leftover turkey and can eat turkey sandwiches until it's all gone without ever complaining. I do like to save a pound of meat or so and make a nice stock with the carcass.

Then, on a slow Sunday afternoon, I can make a post-holiday tradition:

Turkey Gumbo with Andouille Sausage



It's not hard if you have the time and know how to make a roux. A couple of gallons of water to cover the bones, some onions, carrots, and garlic, whatever seasonings you like ... I put salt, pepper, thyme, basil, bay leaf, a little oregano and cayenne, and simmer for 2 or 3 hours or so.

Then you make your gumbo, using the turkey stock instead of water, onions, green and red peppers, celery, file' (sassafras), etc. and you've got a ton of delicious gumbo to warm up during the next several cold winter days.

Of course some people like soup, as do I, but I figure why not go the extra steps and make a nice gumbo instead? After all, I'm a Louisiana boy and I've got to have my gumbo every so often or I get real ornery. ;-)
