I would recommend Spain. My first impression of Spain - it's brown. Once you get past the ubiquity of brown in Spain, it's an amazing place. In many ways, it struck me as disconnected from the rest of Europe. It's hard to characterize that exactly but it just seems pleasantly remote. Now all this applies to when I was there around '92, so YMMV. I mention the remote aspect because, to me, that is more vacation oriented. The rest of Europe seems to active, modern and frenetic. The culture and style of Spain is so much slower and at peace with itself.
The food is amazing, as long as you are comfortable with dinner at 10pm. The weather is Mediteranean.
And the castles. They're what you think of when you think of castles. At least they were for me.
Better than the castles though I thought were the cathedrals. Lots of architectural variety. In all, I found they captured the essence of mankind's desperate need to reach for something greater than we.
It's a place I'd like to go to again sometime. We would SO go with you. Of course, there's a new one expected right around that time and the babysitting would be a bit, er, expensive. In a few years!
