Today I bought
Beets
Sweet Potatoes
Rustic Potatoes
Sweet Onion
Carrots
Parsnip
Fennel Bulb
Garlic
Fresh Sage, Rosemary and Thyme
*Butternut squash would be nice too.
I'll be cutting veggies and onion in large chunks, leaving garlic as whole cloves, tossing it all with olive oil and salt and pepper.
I'll add all of the Rosemary and 1/2 the Sage and Thyme for roasting. When done roasting, I'll top with finely chopped fresh herbs and cayenne pepper, some more Olive Oil or maybe butter.
Roasting
Place in the pan with olive oil and some water, cover, roast at 375. Take cover off, add more olive oil or butter, roast some more.
Add herbs.
Take lemon for those who would like to add it.
