Vegan Bell Pepper Roulade or Pinwheels

Colorful Roulade or Pinwheel Apps.

Roast one Red, one Green and one Yellow Pepper
and remove the charred bits as explained here.

Cut them into long thick slices, place between paper towels and refrigerate. Colorful Roulade or Pinwheels

The mix:

Equal parts
Pine Nuts and Pitted Dates
Mash together in a Mortar and Pestle with S&P and Cayenne pepper (optional)
until smooth, refrigerate
Blanch  Spinach or Swiss Chard leaves, enough to add one layer to each Bell Pepper strip.
Drain and place on paper towel to remove excess liquid.

Remove Strips & Pine Nut/ Date mixture from the refrigerator, pat peppers with cloth again to remove any liquid.
On a strip of plastic wrap, layer
Bell Pepper
Green Leaf
Pine and Date mixture
Roll it tightly, keeping the plastic wrap on the outside.
Place in refrigerator for another 15 -30 minutes or until ready to serve.
Remove from refrigerator, remove plastic wrap, slice into 1/2 inch size rolls &
 pierce with a toothpick.
Arrange on Platter and serve.
