The pantry at Casamoomba was overrun with carrots and The Pioneer Woman just happened to have a recipe for
Roast Carrots with Vinaigrette. How fortuitous!
The carrots were easy and good (I made a 1/4 recipe), although she must have wee, skinny carrots for them to cook through in 15 minutes. I needed about twice that time. Also, the printable recipe skipped the vinegar, necessitating a run upstairs to the computer to check the proportions.
The recipe calls for fresh thyme & rosemary. I don't have any rosemary yet (I always kill it before I can bring it in for the winter), so I used chives instead.
While I was out picking herbs, I checked on the raised bed: lovage, skirrets, chives, thyme, and tarragon are all back. There's plenty of room for some new herbs. I'm definitely planting basil & parsley. Not sure what else. Maybe something tall for the back.
The sorrel and strawberries are growing nicely in their half-barrels. However, I noticed some interlopers. There's a strawberry plant in with the sorrel and some violets in with the strawberries. Time to do a little transplanting!
The potted plants are a little uncertain. The wormwood is back. I don't know if there will be any horehound this year -- there's something tiny & green in the pot, but it's too soon to know if it's weeds or herbs. I *think* the mint, lavender, and pinks survived, but I'm not sure quite yet.
