I’ve read a number of A/O stories in a couple of fandoms and my amateur literary analysis is this:

People wanted a way to have M/M erotic stories which had two specific elements of M/F stories: natural lubrication and the possibility for one partner to get pregnant. So they invented the A/O dynamic which has those things and usually the added elements of (a) destiny, whereby particular A/O pairs can identify one another through their scent and find their special partner irresistible. I personally don’t care for this aspect because I prefer stories in which people are choosing their partners, but it does fit will with the “one true pairing” that most of those stories are written around (b) heat, whereby there’s a cycle and the omega goes into heat and is desperate to have sex over and over again and (c) knotting, whereby part of the alpha’s penis will swell up during intercourse and cause the couple to have to remain locked together, I honestly don’t know why this is part of the picture at all. Some stories also have Betas who are more even keeled and not subject to these overwhelming hormonal urges.

I could be wrong about a lot of this . It’s just what I’ve picked up through reading stories.

The trope stems from werewolf lore/fiction and was first developed in Supernatural fandom (big surprise). Alphas are the bosses in a wolf pack, Omegas the bottom of the hirarchy, Betas neutral in the middle.

Here's an article about it on fanlore. Since you're not into mpreg, I don't think you'll much enjoy Omegaverse since many of the stories end in mpreg.
