WARNING: It's really really really long. But there's a lot of good stuff in there.
OK, so here's the simple answer: The movie is much better the second time around. I think you should also have recently watched the first one, or know it well, as it seemed my parents missed MANY references. I even caught a few this time I didn't the first.
Also, note to self: just don't drink when you see this movie. I had to get up in the middle to pee (during the scene when Will meets his father-- I figured I could skip that, not too much there) and after it was over.
So beforehand I made a list of questions I had after the first viewing, and this is where we hit the long answer. 8 pages in my notebook long, exactly, and it will be LONGER here. So, to the Q&A:
Where is the voodoo doll? No sign of it.
Why was Norrington ruined? I could pay more attention to the lines this time around; he's wanted by Lord Beckett for aiding a pirate; but beyond that he said he sailed through a hurricane to catch Jack and lost all his men (and then drowned his misery in alcohol after resigning his post because he felt like a failure); although Jack pointed out in the three-way swordfight that it's technically Will's fault and I think he may blame Will now. Maybe. (But he only cares about dignity, not love, which I think I already explained-- he gave up the heart, essentially damning Elizabeth.)
[I'm going to take a moment to mention a major plot hole that no one seems to have noticed which is in part actually two holes. The matter of the letters of marque; they give the holder permission to act as a privateer, aka a pirate under hire by a certain country (in this case England). How exactly are these letters of marque going to save Will, Elizabeth, or Norrington? They were never charged with being pirates, but aiding one. The second hole; no-one would take the letters of marque anyway, because each port would be like "fuck you, you're a pirate!" and you'd hang anyway. Although I suppose with enough monetary enforcement by the East India Trading Company (which it bothered me that it was marked E.I.Co., because there's the word "trading" in there) they would get away with it in the English ports. Anyway, I could go on but it's a plot hole or two, essentially.]
Why didn't something happen to Davy Jones when Jack put his heart in the bottle of earth? I was wondering this, and it's still not answered to my satisfaction, but possible answers are that you could just barter with it, and that he never closed the jar (which he didn't), but both seem unlikely. This question was based on the fact that Jones can only set on land every 10 years and has near a decade left before his next chance (which he admits to Will after the dice game). The complication: The heart is on land in the chest. The twist: It's not technically on earth itself, just in the chest. So... I hope the next one answers this.
What's up with the compass pointing at Jack for Elizabeth? I'm gonna have to agree with someone else and say that she just wants to be a conscience-free pirate sometimes. I didn't come up with that theory and I've got nothing else, so, yeah.
Wasn't Will supposed to be the spitting image of Bootstrap? Yes, and I still think he isn't. Also, is Stellan Skarsgard (Bootstrap) Peter Skarsgard (his Hollywood name?) or is Peter Stellan's son? That's just something I'm wondering.
Is the starfish on Bootstrap's face getting darker (in color tone) throughout the movie? Yes. White-blue when you first see him and orange the last times.
What is the place where he got the key picture? Seriously, I just want to know.
What happens to the dog? There was a fire in the after-scene... poor doggy!
Who are the candle-people in the swamp? Souls who Tia Dalma has found/saved/ is protecting? Did she find them or did they come to her? Are they connected to how Barbossa got there? No answer before the second viewing but I will expand later in this post.
What is that opalescent thing in Jack's hair? No idea, I didn't even notice it this time because the screen was so dark.
OH, I forgot to say the first time I saw the movie that the Kraaken reminded me of the Sarlak (spelling?) from Star Wars. Haha.
The next list I had: Things to watch for in the second viewing, and here are my comments. To Jess: I didn't notice Jones' accent changing. Also, Jack picks up Barbossa's hat the first time they are at Tia Dalma's.
The final list was notes I took while watching the movie. This is where all the details and stuff start coming in. (These are mostly in the order they are in during the movie, because I made the list during the movie, but there are a few here and there that I was reminded of from the first viewing and so they are anachronistic.)
Beckett says about Jack, "we each left our mark on eachother." What mark did Jack leave on Beckett?
Those wormy-things on the ships... were those barnacles?
A silly moment: Jack's hat is important enough to almost send the crew out for it! I love hats, they are all character. (And yey tricorners.)
Gov. Swann kind of foreshadows that Jack is going to be, well, a pirate: he says something about how he knows Will would be willing to give his life but that he cannot be sure that Jack would do the same.
When Elizabeth is in the cell and says "I would have you right now if I could" or something like that and Gov. Swann kind of breaks it up distracingly... I totally didn't notice the first time because it was so dark, but he breaks a sconce off the wall like Will does in the first movie.
So... I got this from the first movie, but basically Beckett just wants to control all the trade in the sea by controlling the sea itself (?).
When they are running in the cage, Gibbs says "Lift it like a lady's skirt!"
Gibbs seems to know Tia Dalma.
He also says something about the Kraaken that it would suck off your face, which is what it seems to have done to the guy on the ruined ship that falls from the rigging. First, why? Second... what?
Fact: Jack bartered the compass from Tia Dalma.
Silly moment: "Unclaimed properties of a valuable nature?!"
When Jack steals the ring from Tia Dalma, you can see a locket that is exactly like the one Jones has and is the same design as the lock on the chest.
Fact: Jones can only set foot on land every ten years.
Tia Dalma says somthing like "land will save Jack Sparrow."
When Jack sends off Will to get to the broken ship (what they think is the Flying Dutchman) Ragetti says a few things to him that I can't make out.
I LOVE THIS LINE FROM DAVY JONES: "Price? *pt*" Where he does the upper-lip noise, LOL. I wish I could do that. Bill Nighy is SO GOOD.
Oh, the other thing I was trying to come up with the other night about slashy fans using particular scenes, it was so the kiss b/t Elizabeth and Jack.
Yay for Pirate!Elizabeth to have a braid like I did mine! I'm so cool. (Although she does look terrible in mens' clothing, LOL.)
Gibb's line: "Trow (?) canvas!" as they set off from Tortuga. I want to know what it means. (It also seems like besides being First Mate, Gibbs is also bosun and possibly more, since he does all the ship commands.
I was just thinking about the casting call for the pirates-- in the first one they just gathered up lots of bikers and tough guys. For the third one the casting call is looking for guys with unique damages (I can't remember how they put it), like peglegs and stuff, LOL.
FACT: The song that the locket plays is a simple version of what Jones plays on the pipe organ.
OK, this just bothered me: If Bootstrap was undead, and he had a knife on him, EVEN IF he was tied up very well and for a good long time, why didn't he just cut himself free and then float to shore and wait for his undead wounds to heal? GAH.
I love Elizabeth's line: "Decidedly not." (About friendly persuasion.)
Oh, about the CGI on Jack's falling scene; the CGI on the bone cage falling is good, but I also noticed that the Kraaken's CGI-gravity was bad. (Later on I noted something about how the Kraaken's CGI is only good if you're watching the characters and not the Kraaken. Except possibly when it goes Saarlak!Kraaken. [Double a's!])
Fact: Davy Jones says, "I am the sea!"
The chest is buried on the Isla Cruces. (Also, is Tia Dalma spanish for something? Aunt somethingorother? And why are all these islands SPANISH? Where are the French and the English ones?! And why are there no Spanish ports? Or French? GAH)

When Elizabeth makes a comment about Jack's lack of hygiene, he smells his pits. It'd make a funny icon of him going "...paprika..."
Good quote: "I like to wave at them as they pass by."
So they say the Kraaken (and therefor probably Jones and his ship as well) is Scandanavian originally.

Dude, the outer chest that Jones' chest is in? It's SO CLOSE to one I saw on ebay. Scary. I'll see if I can dig up the pics.
When Elizabeth realizes that Jack lied and put Will in danger, he says something like "Turn with the tide, love." Clarify, anyone?
Ragetti calls Bootstrap Will's "twice-cursed pirate father." Just thought that was interesting. Even though the first curse was lifted.
The blowfish guy looks like a guy from the Abarat books. Also, the hermit-crab-slug-for-a-face guy... was his accent east asian?
That building, I guess it was a church (graves and bell) and supported itself (water wheel) but honestly, what is it doing there?! Argh, that bothered me.
When Jones' guys come after Elizabeth and she reaches for her sword and it's not there; that's another Temple of Doom moment (Indy does the same thing with his gun near the end).
Fact: Norrington, Jack, and Will knew the heart was not in the chest. I think.
Fact: Black Pearl has advantage with the wind. I remember something about this is the legends on wikipedia of the Flying Dutchman and something about making a pact with the Devil. But Tia Dalma kind of calls Jones the "devil himself" later. (And the locket, she might have bartered off someone else, although I thought she might be wearing it in the last scene, can't tell.)
Good line: "Why fight when you can negotiate?" A pretty true facet of piracy in those days, scare people into surrender.
Will those old guys from the bar be in the next movie? They're kind of "characters" and I'm really lost as to when they all disappeared from the ship. I mean, I know it was in the fight with the Kraaken but, they all seemed to have vanished into thin air. =( I feel sorry for them.
Jack's boots are darker than the ones caboots.com (the supplier for the movies) is offering now as Jack's boots. Just thought I'd let y'all know.
Another silly moment on my part, when the burning Kraaken flesh is strewn about the deck: "mmm, kraaken, well-done."
Jack's line, "she's only a ship, mate." you can TELL he's lying. he loves that ship. it's his "woman."
The Kraaken pulled the ship under, didn't break it. It'll be back.
The candle-people: They were only present the second time they went to Tia Dalma, and they were humming. I thought maybe they were killed by Davy Jones which might be how Tia Dalma came to them or them to her, but then she wouldn't have Barbossa. Unless he made a pact with Jones as well? Hmm...
Tia Dalma: "Against the cold and the sorrow." Rum? or potion? (Elizabeth seems to hold the mug as if it were warm, but that could just be her emo-ness.) Just thought it was interesting. And the scene where she's throwing together the jar of dirt reminded me of Ursula throwing potions out of her cabinet.
The interesting quote of Tia Dalma: (adressing Will) "You felt with the Black Pearl you could have captured the devil himself."
I can't understand the second half of Pintel's toast: "He was a gentleman,... a fortune he was." (?)
Will's not a pirate yet, he still give up himself (nobly) for Elizabeth to be happy, even if it means she ends up with Jack.
Just a note to myself on Tia Dalma's words: "sail to the ends of the earth and beyond" for Jack AND the Pearl (told you it'd be back).
She also calls him "wicked Jack." what happened between them? If she wouldn't let Jones have her (that's a BIG IF) then I doubt Jack would be luckier.
Another note to self: world's end, a captain "who knows the waters" (and beyond, she said).
Another silly icon idea: Jack with his gold teeth: "Yo ho ho grill." (instead of "yo, yo, yo grill" you know? Yeah, I'm weird.)
At the end of the credits, there is a music credit for "Two Hornpipes" by Skip Henderson. Is that what Gibbs was singing with "15 men on a dead man's chest, yo ho ho and a bottle of rum"? (Also, how many were in the chase for the chest? coincidentally 15?)
What happened to the Black Pearl that Jack made a deal with his soul to get back in the first place?
I didn't listen to Pintel and Ragetti's lines as well as I wanted to, they're some of my favorites. (Big words! lol.)
Does anyone know why they keep using "what" instead of "that" ex, "a ship what's crewed by the damned" (example, not a line)... is that a British thing?
So that's all, and right now I am too lazy to wiki the Flying Dutchman again and get the pics of the chest. No Spanish, French, Italian, or German translation for "Dalma" that I can find. Although it apparently is an island off of Abu Dhabi. I'll keep looking.

Oh, and just a random thing: the newest Disney Adventures has a Pirates of the Caribbean 2 comic in it. In one of the last scenes they accidentally put words in a text bubble for Mr. Cotton. Oops.
