Trader Joe's Spicy Peanut Vinaigrette Dressing (not)

Here's a loose interpretation of the yummy Trader Joe's Spicy Peanut Vinaigrette dressing. This version isn't spicy (ran out of time to experiment) nor does it have the nuances and nice herb notes from the original. Basically it's a fine dressing in and of itself, but as a perfect knock-off or exact copycat version dressing it needs more fiddling.

(adapted heavily from Danica's Daily Quick and Easy Peanut Vinaigrette)

Makes about 1 cup dressing

3 Tbsp sugar
2 Tbsp water
1 Tbsp soy sauce

4 Tbsp creamy peanut butter

1/4 cup rice vinegar
2 Tbsp canola oil
1/4 tsp cumin
big pinch red pepper flakes (about 1/8 tsp?)
3 Tbsp finely chopped cilantro

Microwave the sugar, water, and soy sauce in a small bowl for a minute or so. Stir until the sugar is dissolved. Add the peanut butter and stir more until everything smooth again (1-2 minutes). Add the rest of the ingredients, stir. Taste and add a bit more water if it's too thick/salty. Store in the refrigerator.
