Niagra 15% alcohal 2 brixs sugar starting to clear. Stopped fermentation with meta about 2 weeks ago. .7% acidity MEOW that is right were you want a white!!!
Cab Franc. 13% alcohal -2 brix sugar, clearing nicley, fermentation stopped naturally. acidity at .65% In other words this wine is going along almost perfectly for red.
Dimond niagra 15% alcohal -2 brix sugar, not clearing yet, fermentatioin stopped naturally. acidity at .7% again perfect for a white May be at a slight sweeter state and may start fermenting a touch more after toping off with 21 brix dimond juice.
Delaware 16% alcohal 10 brix sugar not clearing yet just stoped fermentation with meta, although it probably stopped on its own I just want to make sure it stops at this point. acidity at .75% ok touch high but fine for dessert wine. May be at slightly higher brix next test since I will be adding 21% juice to top off.
