minervacat Now that it's starting to get colder I share my new favourite soup recipe. Simple and yummy.
Light Cheddar Butternut Squash Soup
2lbs butternut squash peeled and cubed
4c Chicken/Vegetable broth
1c Light sour cream
1/2c grated light cheddar cheese
2tbsp salted butter
1/4tsp cayenne pepper
salt pepper to taste
1tbsp sugar
several chives cut into one inch pieces

1) In a large saucepan combines squash and broth. Bring to a boil then reduce heat to medium. Simmer until squash is very soft, about 20-30m
2) Remove form heat and let stand until slightly cooled. Puree in batches in a blender.
3) Return puree to sauce pan and place over medium-low heat Stir in sour cream, cheddar, butter and cayenne pepper. Season to taste with salt/pepper.
4) Stir until heated through (DO NOT ALLOW TO BOIL) Taste soup and add sugar if squash was not particularly sweet.
5) Serve sprinkled with chives

Note: Soup is thick and filling. At most you might want to have some rye bread with it. Plus it works just as well with regular rather then light ingredients.
