Ingredients
- 1 Cup 35% Whipping Cream
- 1 Tsp Vanilla Extract
- 2 Tsp Icing Sugar (regular sugar will work, but takes longer to dissolve)
- ½ Cup Strawberries
- ½ Cup Sliced Peaches
- ¼ Cup Fresh Squeezed Lemon
- 2 Tsp Granulated Sugar.
Wash the strawberries and peaches. Slice the strawberries in half, and the peaches into wedges (roughly the same size as the strawberry pieces). In a separate bowl mix together the fruit with the lemon juice and 2 tsp. of sugar. Put in the fridge and let sit for at least 15 minutes (The longer you can let this sit, the better! The lemon ensures the peaches don’t brown, so you have up to 2 hours to let it sit if desired.)
On low speed, whip together whipping cream, vanilla extract and icing sugar. Continue to whip until the cream forms hard peaks.
Assemble the dessert in a martini glass. Place a wedge of peach in the bottom of the martini glass and then add a small layer of whipped cream. Add 2 tbsp. of the fruit and lemon mixture, and top with whip cream again. Continue to do this in layers until the glass is full. Serve immediately. Makes 4.
