Do you have any or know where I might find recipes for nutritious dishes that could be prepared at home in -- hum, thirty minutes to an hour? I'm trying to incorporate healther and more filling meals into my daily routine by, uh, preparing healthy, filling lunches to bring to work the night before I go to work. Really easy food for one:

Italian-style tuna pasta salad.
-Boil water for cooking penne or some other pasta shape.

the basic: a can of tuna, a clove of minced garlic, some herbs (dried or fresh: thyme, or tarragon, or parsley, or basil, or oregano, basically whatever you want), celery seed or chopped celery, extra virgin olive oil, salt & pepper. Mix all this together until it tastes good. Depends on how salty your tuna started.

optional to add: preserved artichoke hearts (highly recommended), roasted red bell pepper (recommended), frozen peas (the pasta will defrost them when you add it), a little lemon juice or red wine vinegar

Toss it all together and add more olive oil if you need it. This is good hot or cold, can be easily prepared in the time it takes to cook the pasta, and all the essential ingredients are non-perishable. You shouldn't eat it more than once a week, though, because tuna is a fish with a high level of fatty tissue, so it can carry mercury.

I often post recipes on my blog; they're under a tag, some of them are healthier than others. The tofu recipes I posted recently are pretty quick and quite healthy, as is bean-corn salad, as is hummus, which you can make in a blender in literally 3 minutes and is great with pita bread & minicarrots.

But when I'm in a fix, I always make that tuna, because it's so easy to keep the ingredients on hand for just that occasion. :)
