After all, there are always aspects to an RP character that you don't always have a chance to play out, or may want to expand beyond what has been established. It could also be such a ingrained part of who they are, that it has never been brought up before.

2. His moral alignment is Chaotic Neutral - his primary concern is having fun, which for him means, of course, a lot of chaos. Despite having godlike powers he doesn't care about using them to "the full extent" - he'd rather use them for his own entertainment. Albeit, his actions in Return of Harmony were largely about extracting revenge on Celestia and Luna.
3. He dislikes killing because he can do it so easily and in so many ways that it sort of just feels boring to him. He likes challenges.
4. He was, at one point, good friends with Celestia and Luna. I'm inclined to the fanon that he and Celestia had feelings for each other, but I personally think neither of them ever acted on it, so it wasn't necessarily this big dramatic love story the fandom makes it out to be.
5. He is partially responsible for the creation of the traditional Canterlot speaking voice (which I refer to as "Canterlock") - Luna was nervous about giving public speaking and asked him for tips, and he gave her incredibly silly advice on purpose because he found it funny. But, the citizens of Equestria whom were present for her speech ended up being so impressed that the speaking style stuck.
6. He is also partially responsible for the creation of Nightmare Moon. During the time he was the tyrant of Equestria, he used his powers to manipulate and amplify Luna's insecurities so that she and Celestia would be compromised in their ability to fight against him.
7. When he was turned to stone? Awake and aware the whole time. Celestia thought it was fitting, having him imprisoned in such a way that he would be aware of his powerlessness and being ignored by everyone. But, his partial sentience was just enough that the manipulation of Luna he had been performing stuck, those feelings of bitterness and jealously eventually causing her transformation.
8. The other statues in the Canterlot sculpture garden were ponies that Discord had brainwashed into working for him while he ruled Equestria. He did this deliberately to force Celestia's hoof - he knew that her only option would be to turn them to stone because the effects of his brainwashing weren't reversible - the manipulation he performed on Luna, and later the Mane 6, were a drastically toned-down, temporary and more subtle version of this brainwashing.
9. He and Celestia refuse to use their powers against each other directly, given that the clash of godlike powers would be the pony version of total nuclear war. Not that he's morally interested in preventing war like she is - he just figures that he'd be bored if there wasn't an Equestria left to inflict chaos and pranks on.
10. The rhyming couplets he speaks in when delivering riddles strikes me as odd- he's the embodiment of pure chaos, and yet he occasionally speaks in a way that's deliberate and structured. The headcanon I've figured for that is that he learned poetry from the sisters. He's not sentimentally attached, but he thinks it's very fun, even if it has icky structure to it.
11. When he got turned to stone, he knew he was gonna go out so he decided to have some fun with it and started reciting poetry just to mess with the girls - hence, the pose he was in when he got turned to stone.
