I don't know about sexist, but they sort of squick me out. Especially if they're not the "always been a girl/guy" type and have been transformed into the other sex and just seem to be sort of OK with that.
To be fair of your last point: gender roles are not universal to all canons so picking a similar character from a similar setting can still be an inaccurate comparison to how the genderbent character would turn out. And for some people the goal is less "get a similar personality" and more "see what kind of differences and similarities crop up from the original". It's a comparative thing, like any other "what if x happened instead" AU.
But it can be handled very poorly and squicky and it's not everybody's thing, so if you don't like it you don't like it. o7
Genderbent characters can be played right, but rarely are. Too many of them are made so they can ship with a certain canon character because the mun of the other character is anti-het or anti-slash.
