Cuban Ropa Vieja is cooking in the crock pot for dinner. Perfect for a Key West winter day. Beef, tomato sauce, peppers, onions, cumin and cilantro...what can be better than that?
The Cilantro is my first harvest from the herb garden I received for Christmas. I think the herbs are out growing their pots and need to be transplanted. Good project for this weekend.
Long week at work this week. I'm back to working Fridays and off Sundays. So I worked my last double this Sunday and will turn around a work a double this Friday. Sucky. I do get to leave early next Friday so that we can leave early for Disney to beat rush hour traffic.
