I think I just made one of my best suppers ever.
Panko-crusted Tilapia: beat an egg, dip strips of tilapia in it and then dredge them in panko. Bake on a foil covered baking sheet at 450 for about 15 minutes.
Dipping sauce: 3 parts ponzu sauce, 1 part olive oil, 2 parts lemon juice and a bit of Miracle Whip to hold it all together. (this is a guess so you may have to adjust it)
I rounded it out with jasmine rice and peas.
I *loved* the dipping sauce but it wasn't quite as much of a hit with everyone else. I'm not sure how I'll tweak it next time, probably leave out the mayo or something.
The fish, on the other hand, was perfect. If you don't have any panko go buy some right now. You probably won't regret it. :)
