They don't normally change colour with every moult, no. Their colour is strongly affected by the water they're in, though - yabbies in muddy water will usually be brown or greenish or sort of sandy-coloured. Put them in clear water, and they might turn a darker brown, or they could go black or blue. These guys were probably raised in a mud-bottomed dam or a fairly mucky tank setup, but now that they're in a (reasonably :P) clean tank with sand substrate and a decent filter, their genetic colouring is overriding their environmental colouring. And Scuttly is bluuuuuuuue~! XD I'm ridiculously pleased by that!
