Post #2: A picture of something you ate today
I cooked salmon twice today. First for breakfast. I made a "Salmon Scramble" - scrambled eggs, smoked salmon, chives, and cream cheese along with some turkey bacon. (Jeff said the bacon was a bit much since we already had meat in the eggs. Noted.) Second for dinner. I love Trader Joe's salmon with Lemon Citrus Butter. It comes pre-packaged with the butter (and some lemon and kale) so all I do is broil the salmon for ten minutes and spread the butter on. Easy! I made quick-cooking brown rice as a side. When it's just me and Audrey, I prefer to do quick meals so I can get all my chores in and have time to hang out with her, not spend the whole evening in the kitchen.
So there you have it! Salmon. Twice.
