food help! calling all comments

1. What can I do with a whole bulb of fennel, plus frond, that won't end up tasting like licorice? I know you can do...things...with fennel that downplay the anise but I don't know what.

2. What can I do with half a bushel of apples that is not applesauce, apple butter, apple crisp, apple cake, and preferably does not require rolled dough (apple pie, apple dumplings). Alternatively, if (1) apple dumplings can be frozen, and (2) you have a foolproof dough recipe, share that recipe!
