I fried one up with half a potato and a shallot and some thyme and lemon juice and a splash of white wine and a hotdog. Yes, a hot dog. You can't get knockwurst in Ames. I deal. The meat is totally optional though. So is the hard boiled egg I ate with it. What's not optional is you making this dish. Because it is super easy and you will discover you like parsnips and life will be good. Slice them and the potato nice and thin, and enjoy.
I still have one more and the other half-potato...I'm sort of thinking mini meatloaf with parsnip-potato mash. y/n?
Also...what do you do with veggie broth? I've started making it and now I don't know what to do with it. I have four quarts in the freezer already. Help!
