Five episodes into Buffy

S1 is a bit like a classic horror movie (or a parody of one, I'm not sure which). There will always be the occasional S1-style episode, but on the whole, each season has its own unique feel and execution. The following seasons are much less "monster of the week" and much more serialized television.

This improves. I'm hoping it's her character traits that are bothering you (and they're a bit bothersome in S1), but I find her to be brillaint once the role calls for a bit more.

The growling is a bit...in your face in the early seasons. It will always be there somewhat if they have their vamp faces out, but it gets more subtle.

Cordelia was in the middle of the road blinded and a UPS truck was coming right at her and it didn't even slow down; it would have run right over her had Buffy not saved her, which is ridiculous, since you could see the driver through the massive windows, and there is no way

I don't think you're looking too deeply at all. Buffy has a rich mythos, much of which will be explored if you watch the whole show.

Yes, the first season vamp-growling is more zombie-like than it probably should be.

Like, it seems like Giles conveniently has all the information he needs about anything in his handy books, and he has the power to grab the exact right one and turn it to the exact right page when he needs it.

This will happen less and less through time, especially after season 3. They make mention of that in the commentaries, actually. Starting in season 2 though, Giles really gets new depth beyond just "exposition guy".

And who made all these prophecies, anyway?

Your guess is probably as good as mine. They're mostly convenient exposition tools (and, like Giles' convenient speeches and books, they will be featured less as time goes on).

They said that once every generation a Slayer is born.

This will be more thoroughly explained in S1E12 'Prophecy Girl' and then receives further focus in seasons 2, 3, and 7.
