I'm just going to share this, since it helps keep me "regular" and is in the dessert category...  :)

Pumpkin Custard

5-6 eggs
2/3 cups sugar (or Splenda baking sweetener)
1/2 tsp salt
1/4 tsp nutmeg
1 3/4 cups milk (or heavy cream)
1 1/5 cups of pumpkin (not pumpkin pie mix, although it might work)
1 1/2 tsp cinnamon

Beat eggs slightly.  Switch mixer to low and add in remaining ingredients.  Pour into custard cups.  Bake in preheated 450 degree oven for 20 minutes.  Turn down oven to 425, and cook about 20 minutes more.  Remove from oven while still wibbly/wobbly/jiggly/unset/not quite done and let them sit.   Serve when cool.
