I made some cookies recently which were a big hit with my co-workers. Having typed up the recipe for them, I figured I'd post it here too. The recipe makes a very soft cookie that almost melts when you eat it. The basic technique, beating sugar with whole eggs until pale and thick, isn't a very common one; I make a chocolate mousse in a similar fashion.
Orange-spice chocolate cloud cookies
2 oz unsweetened chocolate
4 oz bittersweet (70%) chocolate
3 tablespoons butter
7 tablespoons flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
generous pinch black pepper
2 eggs, at room temp.
3/4 cup sugar
finely grated zest of one organic orange
1 1/2 tsp vanilla
1 1/2 tsp grand marnier or other orange liquor
Preheat oven to 350, and line cookie trays with parchment paqer (don't just butter & flour them; you'll have a mess on your hands. The cookies are really fragile when theyre warm.) Melt the butter and the chocolates. COmbine the dry ingredients.
Beat the eggs sugar in a large bowl for 5+ minutes, until they are pale and thick. Add the vanilla, liquor, and melted chocolate/butter mix and fold gently to combine. Stir the dry ingredients in gently. The dough will be quite loose, almost more of a batter. Drop it by spoonfuls onto the lined cookie trays (i used between 1 and 2 teaspoons of batter per cookie). Bake for 8 -10 minutes, until the tops are shiny and crackling. Let them cool on the trays 5 minutes before transfering to cooling racks.

I've made these with lots of different flavorings. Instead of the orange & liquor, you can use more black pepper and a pinch each of ginger and cayenne, and a splash of rum. I've also tried adding powdered instant coffee and kahlua. this batch was a bit "pinch of this, dash of that," but I think the quantities above are close.
