Those cookies are low glycemic because of the unrefined sugars and high-fiber flours, but if you don't have blood sugar concerns you can always use 1 cup regular granulated sugar, 2 2/3 cup all-purpose flour, and 1 egg. Coconut flour is yummy and interesting, though. :) You can buy it on amazon, if nowhere else. I'm thinking of getting it from there next time, because the place I bought it from locally was pretty expensive.

Well, it doesn't have a very strong coconut flavor, especially when you mix it with other flours, but it's definitely different. If you really want to coconut-up a recipe, switch out any oils or shortening for coconut oil, and any cream or milk with the coconut equivalent. That'll do it. :D There's this pumpkin-coconut squares recipe I really wanna try that calls for that...

Yeah, the fact that I like to cook is making this whole process easier. I'm able to look at the need to find new ways to eat as something interesting and fun most of the time, instead of just feeling deprived. (Though I do feel deprived now and then, it's true.)

And I should say that coconut flour definitely does have a light coconut flavor that's noticeable, especially in simple recipes like my experimental cookies. It's not very strong, but it's definitely there. You can also use coconut flour as a thickener in gravies and sauces, which I bet has an interesting taste, too.

My next experiment, I think, is going to be some kind of healthy pudding. Should be interesting.

I enjoy *thinking* about cooking, and tasting new foods, and imagining how stuff would be if you replaced this with that. But...dear gods, i hate to cook. So. Much.
