Pancit Bihon

My accomplishment yesterday was cooking pancit bihon (rice sticks) for a potluck. Usually pancit at parties is warmed up in those water pan/sterno set-ups, but that wasn't available, so I had to figure out what to do because if there's anything worse than cold pancit it's dried-out pancit.  I put it in a big wide crockpot after it was cooked, added a bit of liquid, put it on "keep warm" until we were ready to go. When we got there I added a bit more liquid, put it on low for 10 min, then back to keep warm. That worked. Everyone liked it and it vanished quickly.
I personally think the key to good pancit is good soy sauce. I like Kikkoman and it's easy to find.
