Today I had a really odd craving for carrot salad, which I haven't had since I was very small. Unfortunately, the recipe I used to love is in a cookbook that vanished in the Great Parental Divorce, and I have yet to replace it. Some internet searching turned up recipes that either obscured the carrots with other focus ingredients (cocoanut, pineapple, and marshamallows were the top contenders) or required mayonnaise, bottled dressing, or both (ick!).
So, with some experimentation, and some sacrifices to the God of Manual Kitchen Appliances (Nora should not be permitted near a box grater or a peeler without adult supervision), I present to you my awesome carrot salad:
Nora's Awesome Carrot Salad
Ingredients:
- 4 carrots
- 2 Granny Smith (or other really tart) apples
- 1/8 cup raisins
- 1 T lemon juice
- 1 T balsamic vinegar
- 2 T honey
- generous fresh ground pepper
- reasonable salt (to taste)
Peel the carrots, trim their ends, and grate into a large bowl. Nom the end pieces you can't grate without destroying fingertips. Peel the apples, remove the cores and all bruises, and grate on top of the carrots. Add the raisins, lemon juice, balsamic vinegar, honey, pepper, and salt, and toss well.
Serves 1 Nora for lunch or 2 Noras for snack.
