I made such a delish dinner tonight!!! :-D
I went to Stop and Shop and bought fresh mozzarella and balsamic vinegar, and I returned home and chopped some garden fresh tomato and hand picked red basil. Then, I layered thick slabs of the mozzarella on half a loaf of French bread and broiled it until the bread was crispy and the cheese was starting to melt. While that cooked, I mixed the tomatoes with a pinch of sugar in a bowl, which got the flavors to party and helped reduce some of the premature acidic taste. As soon as the bread and mozzarella was done, I pulled it out of the oven to cool for a moment while I put together a virgin blackberry-raspberry frozen martini in the blender. I served it in a crystal martini glass and plated the sammie with the strips of fresh basil and macerated tomato, which I topped off with a healthy spritz of balsamic vinegar.
YUM-O!!!
Absolutely, positively perfect. Well, that is, if my Dave had been there to enjoy it with me! But it was pretty close to perfection! :-P
