For a Jedi, there is an obvious answer to this question - for most of the beings in the Republic, a Jedi without his lightsaber is no Jedi at all. But if you take away our most obvious weapon, we still have many at our disposal.
The Force, you say? This certainly is the other obvious answer, and there are a number of ways to negate the Force - dampeners, certain drugs, there are even a few species known to us that are naturally resistant to the Force. But lock a collar around our neck, slip a needle under our skin, and you still have someone to be reckoned with on your hands.
Indeed, if you were to strip one of us naked, drug them to the eyeteeth, and stake them out in the desert a thousand miles from the nearest rain drop, they would still not be disarmed. As long as you leave a Jedi alive, they are dangerous.
For the most powerful weapon a Jedi possesses, and the one that I prefer to use first in any sort of situation, is the mind.
