I'm looking for ways to eat healthy and easy for someone who doesn't like to cook and has a hectic schedule. Y'all help me think of ways to avoid drving through Wendy's to pick up crap because it's fast. I keep telling Wild Child that it's all about planning.
I am a big fan of Weaver Street Market or Whole Foods salad/hot bars. Start with a layer of whatever greens you like and then add veggies and some pasta with a palm sized portion of protein and you are good to go. Veggies are low in calories (if you don'[t cook them wiht bacon) and filling.
I keep a bag with Clif bars and an assortment of dried fruit always ready to go. CostCo has been carrying a mixed bag of dried figs, apricots and dates. I like all of those, so I have some of those with my lunch. I usually have some candied ginger in my bag, too. That helps my sweet tooth.
I keep Greek yogurt in my fridge (CostCo is a great deal for this, too. We can get 12 6-oz containers for just under $12. Strawberry, blueberry and peach.)
I get 24 packs of low fat mozzerella sticks and get one/day for calcium and protein.
I've quit buying the mixed salad boxes because the red leafed stuff spoils too fast. I keep spinach and arugula in the fridge and have a ridiculous selection of dressings.
I keep salmon burgers, ravioli and crabcakes from CostCo in my freezer. All of those will feed me in 15 minutes.
Sweet potatoes in the microwave are insta-meal for me, too. I like them without butter, which is a benefit. I peel it like a banana and just eat it out of the skin when it has cooled enough to hold.
I like brown rice with beans on it, too. I keep cans of beans and tomatoes-and-okra in the cabinet to dump on rice when I don't feel like doing much for dinner. Cooking one cup of rice and a can usually gets me 2 meals. Hot sauce helps those be more interesting.
