The One True Rice Pudding

...okay, YMMV, but this seems to be close to the one I remember from childhood. (Although that version made a HUGE vat of it and this is more couple-friendly.) Many rice pudding recipes start with raw rice, this uses leftover rice. Some "rice puddings" are cooked on the stovetop also; this is baked.

Baked Rice Pudding

Scant 2 c. milk, scalded
3 eggs, beaten
Scant 3/4 c. white sugar
Heaping 1 c. cooked rice
Handful raisins, or to taste
Vanilla, also to taste
1/2 t. salt
1/4 t. nutmeg

Beat eggs and add sugar, salt, and vanilla; gradually whisk in scalded milk. Layer cooked rice and raisins in a greased two-quart casserole and pour egg mixture over. Dust with nutmeg and bake at 325 for one hour or until done.
