I can't get enough of this!

Poke some holes in a large eggplant or two smaller ones.
Put it in the oven on Broil for 20 minutes (it's done when the skin on top feels like paper when you poke it).
Run some cold water over it as you peel off the skin (or you can let it cool on its own first, if you're the patient type).
Cut the tail off and drop the whole thing in a food processor.
Add 2 or 3 garlic cloves, 1/2 teaspoon of sugar or agave nectar, a tbsp of olive oil, and salt to taste (for the latter you will have to keep stopping the processor to taste and add more if needed).
Turn food processor on and process until it looks like dip.
Spread on french bread and serve with sliced tomatoes.

I'm drooling just thinking about it. Yesterday, I ate 1.5 eggplants prepared this way in one sitting. I just grabbed a spoon and stinkied myself up thanks to the garlic. By the time Ionel got home I had quite an aroma going. I don't care, it was well worth it. :o)

(If you don't like garlic, you can do the same thing but add half of a small onion instead. If you do like garlic, however, use it because it tastes much better.)
