Happy Thanksgiving

Hope everyone celebrating had a nice holiday, and everyone else had a nice quiet Thursday.

Had a nice video chat with my mom in NJ, who did Thanksgiving with her upstairs neighbors. I'm glad she has some good people in her little quarantine bubble and didn't have to be alone for the holidays.

The Boy and I have continue our married tradition (it's a tradition if you do it two years in a row, right?) of having something other than turkey for Thanksgiving. Last year, full of vim and vigor, I made roast duck with all the trimmings. This year, vim and vigor have been in shorter supply, and we order a ham and some sides from the Honey Baked Ham company. This left me free to focus on baking, which is something that actually relaxes me when I do it. I made this cornbread pudding recipe as an extra side, which turned out easy and very tasty. For dessert, I made my usual cheesecake recipe, but I added Pumpkin Spice Bailey's to the mix, as well as a fair amount of actual pumpkin spice, and topped it with pecan praline and some chocolate ganache. I've experimented with quite a few cheesecake toppings over the past couple of years, and I think this one is my favorite so far. 10/10, would stuff my face again.
