I promise a real update is coming at some point, but for the moment I need some suggestions.   Apparently folklorists in Indiana love potlucks (who doesn't?) and I have a third one on Tuesday.  Need suggestions for what to bring.  I have the following restrictions though ( Read more... )

I second a dessert, if you have some baking ingredients. Brownies (or other bar cookie) are easy and can easily be transported in the pan they're baked in. Simple cakes baked in a springform pan are also easy-- if you have the pan. Or, if you have a little time the day before, homemade bread is an awesome potluck item, and pretty inexpensive since it's largely flour and yeast.

For non-baked goods, if you get good produce, a simple summer chopped salad would be nice (with corn, peppers, tomatoes, whatever). Or some of those same things with Israeli couscous and a vinaigrette.

Of course, maybe what the people really want is "hot dish", in the Midwestern tradition (hence the loneliness of your potato salad).
