Polenta Cookies (i/o crescents)

Source - 500 Cookies by Philippa Vanstone

Ingredients
115 g unsalted butter
100 g icing sugar
2 egg yolks
Grated zest of 1 lemon - I used 2
2 tsp vanilla essence
150 g plain flour
Pinch of baking powder
50 g of finley ground polenta (aka cornmeal)

Method
1) Preheat the oven to 160 degress. Grease 2 baking sheets. (I used 3 trays). Beat the butter & sugar together until light & fluffy. Add egg yolks, lemon zest & vanilla essence.



2) In a separate bowl. sift the flour & baking powder together & mix in the polenta.



Add to the butter mixture & mix to a smooth dough (mine didnt turn out smooth..maybe due to weather coz there was no water involved)



3) Roll the dough into 1cm thick lengths & cut into 10cm pices. Shape into cresents & space them 5cm apart on the baking sheets. Bake for 15 min until pale in colour. Cool on wire racks.

Well my dough didnt turn up as expected so wasnt able to roll it as it keeps breaking...so plan b was to use my cookie cutters (finally able to use them as have bought them for awhile) and use the flour to smooth it....then cut the dough into whatever numbers/alphas...at least I didnt end up wasting much dough....maybe next round I should put the dough into the fridge for 30 min.....have to improvise sometimes as not all receipes are the perfect one..

Overall it came out alright...and tasted lovely....I was planning to dribble some melted chocolate over them but after the frustration I had with the dough getting too oily for the cookie cutters...will KIV for next round...family loved it...well esp hubby coz he requested for cookies...he better make sure he eats majority of it..
