I went to my usual fishmonger (yes, I have a usual fishmonger) and it had gone out of business. The place still had all its counters and such, but no fish anywhere. I could even see the water still running in the lobster tank. There was a note thanking all their customers over the years and that was it. So sad.
So, still needing fish, I had to go down the street to the Shaw's, which is probably the reason my fishmonger had gone bust. No halibut to be had (but that's okay because I was going to agonize over halibut or haddock), so it was salmon+haddock+scallops. The idea is to lay out the salmon, then the haddock, then make a line of scallops, and wrap it all up like a fish log. I think I was supposed to refrigerate it to solidify things, but I was out of time, so I started cutting. You slice your fish log so you have these fish danishes, an outer circle of salmon, an inner circle of haddock, and scallops in the middle.
That's when all hell broke loose. Fish don't like to be arranged as a log. Scallops shooting out from the middle. Thanks to a sharp knife, I got the strips of fish cut and arranged them like I thought they were supposed to be. Then a dollop of herb butter and in the broiler they went. 10-15 minutes later and my god they were great.
Tonight is Chocolate Muffins #7, which are baking as I write. They smell good.
