Well, today went quite well. I slept in to recover from a long Saturday, then managed to do laundry, sweep the room and clean the bathroom.
I also managed to make a salad, spaghetti and 'meat'balls (tofu - see below), and kettle corn. The Kettle Corn burned slightly, but it's still tasty and will accomplish its purpose - preventing me from buying corn chips at work in the middle of the afternoon. As for the spaghetti and 'meat'balls, I was disappointed.
I used Trader Joe's Meatless Meatballs (MMs) and they don't really have any nutritional or culinary benefits. First, I noticed the nutrition information: 6 meatballs (probably about 3/4 cup) have only 7 grams protein and 23% of your daily RDA of salt. The salt is in Ramen-level range (and I use NO salt in making real meatballs), and the protein count seemed low even for tofu. I found a website that suggests tofu is usually closer to 20 grams protein per 1/2 cup, so I think my intuition is correct. Can anyone verify these numbers for me?
Second, the MMs didn't perform well. The instructions say to simmer them in your favorite sauce for 10 minutes. I did, and they fell apart. So now I have tofu 'meat'sauce. The texture is a bit off, and the flavors mixed in an unexpected way. These meatballs were designed by the Nutrimatic Drinks dispenser.
I dislike them so much that I am going to try to finish all the leftovers tomorrow.
On the plus side, I made a great veggie salad and will probably make a decent fruit salad tomorrow morning!
