I just made my first carrot cake and I do believe that I have died and gone to heaven. I used a combination of three recipes to make it, so it is all my own.
The following were used:
Carrots from my garden
Applesauce that I made from my neighbors apples, along with some from Trader Joe's
my homemade vanilla extract
YUM!
