Cooking can be therapeutic

Yesterday I went into my local grocer and found multiple squashes on sale. I literally grabbed all kind I could find. 
Spaghetti squash, acorn squash, butternut squash, and even a pumpkin.

I decided to challenge myself to cook something with them, out of the ordinary, a new recipe. I am also going to document it on my blog, for therapeutic reasons.

First up, the butternut squash. My fave!
I began my searh on Pinterest (you've done it too!). That site is a gold mine for recipes.
And I found this lovely: Twice Baked Butternut Squash (with quinoa and gorgonzola) by Erin on a blog called Naturally Ella. (check it out: http://naturallyella.com)
Sadly, I didn't have all of the ingredients. I was missing the cheese. And I bet that cheese would have totally made it a lot flavourful than it turned out. Still quite delish though! Even my kids gobbled it! :)
