Salad:
1 bag fresh spinach
2 shallots, diced & sauteed in nonstick olive oil spray
4oz soft goat cheese, crumbled
1/2 C dried cranberries
1 C mandarin oranges (packed in water, artificially sweetened)
fat free balsamic dressing (about 2T per person)
Serves 4. Weight Watchers points plus = 3 per serving. (everything is 0 points except the cheese & cranberries.)
Stuffed Mushrooms:
4 portabella mushrooms, stems removed

stuff each mushroom with 1/2 of the dip (there will be leftovers), then bake at 375 degrees F for 20-25 minutes until the filling is nice & melty.
Serves 4. WW points plus = 4 per serving. (mushrooms are 0 points.)
New York Cheesecake:
this is an official WW recipe from the Best Darn Food Ever! cookbook.
1 T unsalted butter, softened
1/4 cup graham cracker crumbs
1 1/2 packages (8oz each) light cream cheese, softened
1/2 C sugar
3 large egg whites
1 1/2 T cornstarch
1 1/2 t vanilla extract (or 1 vanilla bean, split lengthwise & seeds removed)
1 C reduced-fat sour cream
1. Preheat oven to 400 degrees F. Grease bottom of 9 inch springform pan with butter. Add cracker crumbs, coating evenly. Refrigerate until chilled, about 15 min.
2. With electric mixer on medium speed, beat cream cheese and sugar in large bowl until light & fluffy, about 3 minutes. Beat in egg whites, cornstarch, and vanilla. Reduce mixer speed to low; beat in sour cream just until blended.
3. Pour batter into prepared pan. Bake until cheesecake is almost set in center, 35-40 minutes. Turn off oven and prop open door with wooden spoon. Let cheesecake cool in oven 30 minutes. Let cool completely in pan on wire rack. Refrigerate at least 3 hours before serving.
Serves 12. WW points plus = 3 per serving.
Very tasty with chopped strawberries sprinkled with Splenda/Truvia/etc.
One serving of each is a 10 point meal. Not bad for a holiday treat!
