The following information may be helpful to those suffering from Celiac/Ceoliac Disease or who have a gluten intolerance:

GLUTEN-FREE BEER
There is a company called Redbridge that makes a Gluten-Free beer.  It is made from sorghum flour and contains no wheat or barley. They specifically cater to those who suffer from Celiac disease.  GO REDBRIDGE!!!  I actually had one of their beers this evening and (this coming from someone who doesn't care much for beer), it was really tasty!  It is more of an amber in color with a taste similar to a pale ale.  ZTejas in Bellevue Square serves this beer and you can find it in stores in this area. GLUTEN-FREE GROCERIES
Yesterday, I rediscovered the joy of PCC Markets.  They actually carry a really good selection of GF foods.  I found 5 different loaves of bread specifically for the gluten intolerant.  I bought some Tapioca Loaf yesterday and ate it with PCC's organic tapenade.  YUMMY!  Apparently you can toast it too. I am going to try that tomorrow.  I also thought of trying to make French Toast with it.  It has a slightly sourdough taste to it, so it will take some getting used to, but it looks just like wheat bread.  They also have GF frozen waffles, cereals, cookies, crackers and other tidbits for us GF peoples.  BTW: The brand that makes the bread is called Ener-G Foods.

Oh, and I highly recommend Glutino cookies.  Their Double-Chocolate Dream Bites and Chocolate Coated Chocolate Wafers are delicious! I am not much for the Lemon Wafer Cookies, but so far, their chocolate desserts are amazing.  I found the Chocolate Wafers at the QFC on Holman Rd.  The only place I know of to get the Dream Bites is a place called Green Fresh Market in Renton. I haven't been there myself yet, but a friend of mine picked these up for me at that store.

GLUTEN-FREE DESSERTS IN TACOMA
For anyone living in the Tacoma area who would like to enjoy some yummy gluten-free desserts, go to Affairs Chocolates.  They are the company who is making the cake for the wedding.  The first tier will be their Chocolate Truffle Torte.  Totally gluten-free and to die for!  They have a couple of other desserts which are wonderful, including the chocolate mousse, which is served in a chocolate teacup with real whipped cream and a chocolate "straw".
