I made the most awesome food tonight. Mexican pizzas! These are awesome, let me tell you.
Recipe:
6 corn tortillas
1 can chipotle peppers in adobo sauce
1 jar Mexican style cheese sauce
1 lb ground beef
1 can pinto beans
1 package taco seasoning
3/4 cup sharp cheddar cheese
2 green onions diced
fry tortillas, one at a time, turning and keeping watch so they don't fold or furl at the edges but stay flat. Sautee beef until browned, add taco seasoning. Puree can of beans in food processor until smooth, add to beef mixture. Spread beef and bean mixture evenly between 3 of the tortillas, top with another tortilla. Puree the can of chipotles in adobo (these can be found in the mexican food section of almost any store, Walmart and Meijer both have them) until smooth, spread over the top of the pizzas. Sprinkle 1/4 of the cheese on each pizza, scoop 1 tablespoon or more of the cheese sauce over the pizzas. bake at 350 until the cheddar is melted. Sprinkle with the green onions. Serves three or keep leftovers for the next day.

Rough day guys. I tried to call the office today, even stood outside calling on my phone to get things worked out. They were sitting in the office with the door locked screening their calls today, and even when I knocked on the door looking right at them the entire time, they didn't come to the door or answer the phone, and they haven't returned my messages. what a bunch of unprofessional assholes! If I get evicted I'm slashing some tires. SERIOUSLY.
Plus tomorrow I have a GLWTFBBQ meeting. I'm scared. I don't want to go. DON'T MAKE ME.

I've been trying to make myself go to the Episcopalian church for...about two months now. I think about sitting in a church and I freeze and panic and can't breathe. I've spent every Sunday crying and rocking back and forth but I can't make myself go. Though I don't believe in bargaining with God anymore, I did pray and say I'd go back to church if I don't get evicted and end up living in a box. We'll see.
I don't want to die.
Lord, I believe. Help thou, O God, my unbelief.
