today my partner and I finished a pistachio creme brulee tart with a cherry sauce and brandied cherries, a quenelle of chantilly cream and a white/dark chocolate cigarette.

Chantilly cream is just whipped cream with powdered sugar and vanilla.

We also started the first prep for tomorrow's coconut/tapioca soup with diced fruit, passion fruit sauce, strawberry sorbet and mango sorbet. Oh, and the garnish is a mango chip. Delicious.
